Taco Bell Nacho Cheese Sauce

A copycat of Taco Bell's smooth, pourable nacho cheese sauce — mild, creamy and perfect for dipping chips or drizzling over burritos and fries. The original clipping was a link/photo page only, so the method below is a faithful reconstruction of the standard melted-cheese sauce.

Ingredients

2 tbsp (28 g)butter
2 tbsp (16 g)all-purpose flour
1 cup (240 ml)milk
2 cups (225 g)shredded American cheese
2 tbsp (30 ml)jalapeno pickling liquid
1/4 tsppaprika
1 pinchcayenne pepper
to tastesalt

Instructions

  1. Melt the butter in a saucepan over medium-low heat, then whisk in the flour and cook 1 minute to form a smooth roux.
  2. Gradually whisk in the milk and keep whisking until the mixture is smooth and slightly thickened.
  3. Lower the heat and add the shredded American (or mild cheddar) cheese a handful at a time, stirring until each addition melts completely.
  4. Stir in the jalapeno pickling liquid, paprika, cayenne and salt.
  5. Cook gently, stirring, until the sauce is glossy and pourable. Thin with a splash of milk if needed and serve warm.
