Ingredients

½ lb. (225 g)ground beef
1 tbsptaco seasoning
1 cup (160 g)cooked rice
2large flour tortillas
1 cup (110 g)shredded Mexican cheese blend
¼ cup (60 g)sour cream
¼ cup (60 ml)nacho cheese sauce

Instructions

  1. Cook the ground beef in a skillet over medium heat, breaking it up, until browned. Drain, then stir in taco seasoning and a splash of water and simmer 5 minutes.
  2. Cook the rice according to package directions.
  3. Sprinkle shredded cheese over a large flour tortilla and heat in a skillet until the cheese melts, forming a quesadilla.
  4. Spoon the beef and rice down the center of the quesadilla, add sour cream and nacho cheese sauce.
  5. Fold in the sides and roll up tightly into a burrito.
  6. Toast the rolled quesarito seam-side down in the skillet 1–2 minutes per side until golden. Serve warm.
