Ingredients
| ¾ cup (130 g) | black beans |
| 8.5 oz (240 g) pkg | whole grain rice medley (e.g. Santa Fe ready-to-serve) |
| ½ lb. (225 g) | 90% lean ground beef |
| ¾ cup (110 g) | frozen corn |
| 12 oz (340 g) jar | salsa of choice |
| 4 oz (115 g) | Velveeta thinly sliced processed cheese |
| 6 | 10-inch flour tortillas, warmed |
| to taste | torn lettuce leaves (optional topping) |
| to taste | sour cream (optional topping) |
| to taste | shredded Mexican cheese blend (optional topping) |
| to taste | chopped sweet red pepper and onion (optional topping) |
Instructions
- Add the black beans to a colander, rinse thoroughly and drain.
- Warm the rice and crumble the beef into a 4-qt microwave-safe baking dish. Thaw and add the corn and beans.
- Microwave, covered, on high until the beef is no longer pink (4–5 minutes), then drain.
- Stir in the salsa and cheese and microwave until the cheese is melted (2–3 minutes). Fold in the rice.
- Spoon ¾ cup (about 180 g) of the beef mixture into the center of each warmed tortilla. Add any optional toppings (torn lettuce, sour cream, shredded Mexican cheese blend, chopped sweet red pepper and onion).
- Fold the bottom and sides of each tortilla over the filling and roll it up. Enjoy at dinner or anytime.
