Texas Roadhouse Rattlesnake Bites

Copycat Texas Roadhouse Rattlesnake Bites — spicy fried balls of Monterey Jack cheese and jalapeño in a seasoned crumb coating, crisp outside and molten inside. Serve with your favorite dipping sauce.

Ingredients

2 cups (225 g)Monterey Jack cheese, shredded
2jalapeños, minced
1 clovegarlic, minced
1 cup (125 g)all-purpose flour
1large egg, beaten
1 cup (240 ml)whole milk
1½ cups (150 g)breadcrumbs
1 teaspoongarlic powder
1 teaspoonpaprika
1 teaspooncayenne pepper
for fryingvegetable or canola oil, for frying

Instructions

  1. Add the cheese, jalapeño and garlic to a mixing bowl and mix well.
  2. Form 2 cm (¾-inch) balls from the mixture, pressing gently to compress. Arrange on a baking sheet and refrigerate 1–2 hours.
  3. Put the flour in a mixing bowl. In a second bowl, whisk the egg, then add the milk and mix well. In a third bowl, combine the breadcrumbs, garlic powder, paprika and cayenne pepper; mix well.
  4. Roll each ball in the flour, then coat with the egg mixture, and finally coat with the crumb mixture.
  5. Add vegetable oil to a large pot and heat over medium-high until shimmering, or 175°C (350°F). Fry the coated balls 3–4 minutes, until evenly browned.
  6. Drain on paper towels and serve with your choice of dipping sauce.
