Texas Roadhouse Red Chili

A copycat of Texas Roadhouse's hearty red chili — cubed beef chuck simmered with kidney beans, tomatoes, jalapeƱos and smoky spices, finished with masa harina and topped with cheddar and red onion.

Ingredients

3 tablespoons (45 ml)canola oil
2 tablespoons (30 g)diced garlic
1 cup (150 g)diced white/yellow onion
½ cup (75 g)diced red onions
4 pounds (1.8 kg)beef chuck, cut into ½-inch cubes
2 teaspoons (5 g)chili powder
1½ teaspoons (3 g)ground cumin
1 tablespoon (7 g)smoked paprika

2 teaspoons (12 g)salt
1 tablespoon (3 g)Italian seasoning
ā…› teaspooncrushed red pepper flakes
1 tablespoon (15 ml)vinegar
2 cups (480 g)crushed tomatoes
1 tablespoon (12 g)brown sugar
2 cans (15 oz / 425 g each)canned red kidney beans
¼ cup (30 g)sliced and seeded jalapeños
2 tablespoons (16 g)masa harina or corn tortilla flour
1 cup (110 g)shredded cheddar cheese, for serving
¼ cup (40 g)diced red onions, for serving

Instructions

  1. Heat the canola oil over high heat in a large cooking pot or deep saucepan. Add the garlic and both onions and stir-cook for 2 minutes until softened.
  2. Reduce heat to medium; mix in the beef cubes and stir-cook until evenly browned.
  3. Mix in the chili powder, cumin, smoked paprika, Italian seasoning, red pepper flakes, salt and pepper.
  4. Add the vinegar, crushed tomatoes, brown sugar, kidney beans and jalapeƱos. Mix well.
  5. Simmer for 8–10 minutes, then mix in the masa harina. Cook for 15–20 minutes more, until the mixture thickens.
  6. Serve warm, topped with shredded cheddar cheese and diced red onions if desired.
